A three-week intensive course (24 hours) on Food Design for professionals who want to turn a recipe, menu, service or food experience into a structured, testable and communicable concept. Taught by Ricardo Bonacho, it includes international online masterclasses, a digital toolkit and a final micro-project.

Gastronomy no longer competes on flavour alone. It also competes on concept, experience, narrative, sustainability and perceived value. This intensive course was designed for professionals who want to turn a recipe, a product, a menu, a service or a food experience into a structured, testable and communicable concept. Over 3 weeks and 24 hours of training, you will work on: - Fundamentals and fields of application of Food Design. - Trends, consumers and innovation opportunities. - Culture, territory and gastronomic storytelling. - Sensory experience and the food journey. - Prototyping and value proposition. - Development and presentation of a final micro-project. The course also includes: - 2 international online masterclasses (guests to be announced). - A final project applicable to your professional context. - A digital toolkit with reusable tools and templates. - Close support in a limited-size class. Who is it for? Chefs, cooks, pastry chefs, professionals from restaurants, hospitality, F&B, catering, events, gastronomic tourism, food brands, entrepreneurs, designers and communication professionals. About the teacher: Ricardo Bonacho is a designer, researcher and assistant professor at Universidade Europeia, where he develops work in the fields of Food Design, gastronomy, innovation, tourism and hospitality. He holds a PhD in Design, with a specialisation in Food Design, from the Universidade de Lisboa, and has built his career at the intersection of research, teaching and professional practice. He is co-founder of Food Design Lab Lisbon and of FORK, Food Design for Opportunities, Research and Knowledge, and has collaborated with national and international teaching and research institutions. His work explores Food Design as a methodology for designing more sustainable, participatory and innovative food products, services, experiences and systems.
